2 Protein-Packed Breakfast Snacks you HAVE to Try.

Ah. Another Sunday Evening contemplating the upcoming week. I’m sure it will come with it’s challenges but you know what? I’m thinking positive today. And I’m geared up and ready to tackle whatever tomorrow brings.  In fact… I actually can’t wait to go to sleep because:

A) I am usually exhausted by the end of the day

B) I love wearing my uber comfy Packer Jammies (yes I know. But we’ll be back again next year!)

C) it’s like taking a time travel spaceship to my favorite time of the day – BREAKFAST time!!

Seriously, who doesn’t LOVE breakfast?“Seriously, who doesn’t LOVE breakfast?!” Every breakfast food in the world is amazing and I want you to be as excited as I am, so I want to share with you 2 of my go-to breakfast (or lunch, or snack, or pre workout, or just cause I want something sweet) recipes. One is unbelievably easy and the other takes a little more prep time, but it is so worth it. Oh and did I mention that that both use Apollo® Protein Power AKA the best-tasting protein in the world? Bonus!

So…..let’s start with the easy one. If you handle the complexity of this recipe, you may move to the next level.

APOLLO® Powered-Up Protein Cereal

What you will need are the following:

  1. The Apollo® Protein of you choice
  2. 1-2 servings of your favorite cereal (I use Rice Chex)
  3. 1 – 1 1/2 cups of Unsweetened Vanilla Almond Milk (or Dairy Milk)
  4. Directions:

Place the Almond Milk and Protein Powder in a shaker and shake, shake, shake (shake yo bootay). Once mixed, pour over cereal and VOILA! Easy peasy macaroni and cheesey! PS – I forgot to tell you that there is a challenge that goes with this recipe….I bet you can’t eat just one bowl.😜

And now on to the pièces de résistance. Are you ready? This is gonna knock your socks off…

APOLLO® Powered-Up Protein Pop-Tart!

Now this beauty is a custom creation that I worked on for a while. And for someone who isn’t really all the suave in the kitchen, I am pretty proud of this. There are a few steps to this one, so go grab your apron and suit up.

Step 1:

Gather Those Ingredients..

  • 1 Scoop Aunt Judy’s Banana Cream Pie Apollo Protein
  • 2 Tablespoons Coconut Flour
  • 1/2 t baking powder
  • 1 egg
  • 1/2 T Peanut butter
  • 1/4 T Unsweetened Vanilla Almond Milk (may need more)
  • Filling: Mema Kris’s Strawberry Jam


  • 1 T Aunt Judy’s Banana Cream Pie Apollo Protein
  • 1-2 T PB2
  • Water
  • Marshmallows

Step 2:

Preheat your oven to 350. Mix all ingredients together in a bowl. Start with 1/4 T of Almond Milk and add as needed to get a “cookie dough type” dough.


Step 3:

Split into two even portions and roll into a ball. Place parchment paper on baking sheet and lightly spray with Pam. Place the 2 balls on the parchment 3-4″ apart from each other. Place another lightly greased piece of parchment paper over the top and spread dough with a rolling pin or by using your hands. Can you see my hand prints LOL?

Step 4:

Remove the top piece of parchment paper and spread your favorite jam or jelly in the middle. Aunt Judy may be a great lady, but she doesn’t have anything on “Mema Kris’s Homemade Strawberry Jam” (Mema Kris is my mom and she makes the best jams and jelly’s in the whole wide world)

Step 5:

Now come the tricky part. Using the edge of the parchment paper, flip the “unjammed” side onto the “jammed” side and CAREFULLY peel of the top piece of parchment. Now try to shape the poptart into something that kinda resembles a square.

Step 6:

Bake for 20-25 minutes.

While the poptart is cooling, make your icing by mixing the protein, pb2 and enough water to make a thick icing. When the poptart is no longer in the “your will sear your tongue off” stage, top it with the icing, sprinkle on marshmallows and chow down without ANY GUILT!

Step 7:

Enjoy!! Goodness gracious are these delicious!

In the past I have made a few different variations to the recipe, so if PB&J doesn’t float your boat, try one of these variations below.



  • 1 Scoop of ANY FLAVOR of Apollo Protein
  • 2 Tablespoons Coconut Flour (or oat flour, almond flour)
  • 1/2 t baking powder
  • 1 egg
  • 1/2 T Peanut butter (or almond butter, coconut oil)
  • 1/4 T Unsweetened Vanilla Almond Milk (may need more)


Jams, Jellies, Dark Chocolate, Fruit, Berries, Nut Butter

or a combo of all if you are crazy like that


  • 1 T ANY Apollo Protein
  • 1-2 T PB2 (or melted dark chocolate)
  • Water (or Almond Milk)
  • Sprinkles, chocolate shavings, fruity cereal
